Goo Balls

No, these aren’t the psychedelic snacks popular among hippie stoners at Grateful Dead concerts. These goo balls are the homemade alternative to Power Bars.

Prep time: 30 minutes
Makes: About a dozen golf ball-sized goo balls

3 cups oats
1/3 cup safflower oil
1/4 cup peanut butter
3 tablespoons honey
2 tablespoons cocoa powder
1/4 teaspoon vanilla
pinch of salt

In a bowl, combine the oil, peanut butter, honey, vanilla, cocoa powder and salt. Then thoroughly mix in the oats. If the mixture isn’t holding together, add a little more honey. Place the bowl in the freezer for 10 to 20 minutes to help firm up the mix. Take it out of the freezer and form the mix into little snack-sized balls. Eat them immediately or stash them in a container in the fridge till you want them.
